‘Nother Wet One!


I decided, early in the day, that I would work on paying the household bills then go do the necessary shopping for the week. Silly me – it was DRY out EARLY; when I had organized all my lists and was ready to go, as I stepped out of my porch it began to rain – lightly. By the time I got to the bank (2 minutes away) it was POURING TORRENTS! (In fact I could almost not hear the teller at the drive-through for the LOUDNESS of the rain on the overhang roof!) Thinking to myself: “Should I just give this up and go home?” Naw – and off I went. Stopped at Office Max for supplies and got $10 off for my birthday (it pays to be an Office Max/MaxPerks customer!). Got $14 credit for turning in 7 empty printer ink cartridges (yay!) – all in all, that was a GOOD SHOP! Ran to the dollar store then Meijers (since I have Sunday School snacks this Sunday) – got a few good buys there, too, then to Tim Horton’s for coffee for husband & I, and finally, home! It’s slowed down a little on the rain, but I’m guessing it’s just going to be a wet day. Dinner is going to be Cheeseburgers, Red-skin potato salad and Cole Slaw! Easy and tasty!

Gas prices came down a little: $3.88/9 now for regular in my neighborhood. Could be lower, but I’m not complaining now that I don’t have to drive 1/2 hour to get my grandson at his bus stop.

Since Father’s Day is this Sunday, have more ‘Man-Pleasing’ recipes:


Barbecued Stuffed Patties

1/2 C. crushed saltine crackers
1/3 C. barbecue sauce
2 T. sliced green onion
1/4 tsp. black pepper
1 lb. lean ground beef
8 dill pickle slices (optional)

In large bowl stir crackers,
BBQ sauce, onion & pepper.
Add ground beef; mix well.
On waxed paper, shape
mixture into 8 thin patties
3 1/2″ in diameter. Top the
patties with pickle slices,
place remaining patties on top
& seal edges, completely
enclosing pickle. Grill patties
over medium heat 11-13
minutes or until no longer
pink, turning once.
Makes 4 patties


Cheesy Beer Monkey Bread

3 1/2 C. self-rising flour
1/2 C. sugar
1 (12 oz) beer
8 oz. cheese, cut into cubes
1/2 stick of butter, melted

Preheat oven 375 degrees F.
Spray Bundt pan with nonstick
spray. In large bowl, combine flour,
sugar & beer; mix until just combined.
(Flour is going to be VERY sticky) Pull
out little chunks of dough, wrap it
around cubes of cheese, dip into
melted butter & place in Bundt pan.
Bake 40 minutes.
Best served warm, but good cold,
also.  Makes 1 loaf.

Dill Pickle Bites
(overnight recipe)

1 (8 oz) pkg. cream cheese, softened
2 T. mayonnaise
1 T. grated onion
1/2 tsp. dried dill weed
1/8 tsp. ground black pepper
12 baby dill pickles
12 slices white bread
hard salami slices (optional)

In small bowl combine cream cheese,
mayonnaise, onion, dill & pepper; mix
until well combined. Cut crusts off bread
slices & roll each slice flat with a rolling
pin. Spread cream cheese mixture thinly
on bread slices, using approx. 1 T. mixture
per slice. Place a baby dill on each and roll
up.* Place, seam-side down, on a glass
baking dish. Cover & chill 8 hours or
overnight. To serve, cut each roll into
3 pieces.
* If using hard salami slices, spread
about 1/2 T. cream cheese mixture on
bread slice, top with 1 slice salami &
spread with remaining 1/2 T. cream
cheese mixture per slice. Place baby
dill on top of second cream cheese
layer & roll up. Refrigerate then slice.

Hickory-smoked Baked Beans

1 lb. bacon, fried & crumbled
1 lb. hamburger, cooked
1 (28 oz) can Boston Recipe baked beans
1 (15 oz) can kidney beans, rinsed/drained
1 C. ketchup
1/4 C. brown sugar
2 T. liquid smoke
2 T. vinegar

Combine baked & kidney beans, cooked
bacon & hamburger; mix until combined.
In bowl, mix remaining ingredients; add
to bean mixture & mix to combine. Cook
on Low 6-8 hours. Serves 12

Taco Salad

1 head lettuce, shredded
1 (16 oz.) bottle Catalina salad dressing
2 tomatoes, chopped
1 onion, chopped
2 c. shredded Cheddar cheese
1 1/2 lb. hamburger, browned & drained
of grease
1 large bag Doritos Nacho-Cheese flavor,

Mix cooked hamburger with lettuce, dressing,
tomatoes, onion & cheese in large bowl.
Refrigerate until ready to serve. Just before
serving, mix in crushed Doritos

Creamy Ranch Potatoes

6 strips bacon, cooked & chopped
1 T. bacon drippings
2 1/2 lb. small red potatoes, cubed
8 oz. cream cheese, softened
1 (10 3/4 oz) can cream of potato soup,
1/4 C. milk
1 envelope ranch salad dressing mix
3 T. green onions, sliced

Place cubed potatoes in crockpot. Beat
together cream cheese, soup, milk,
dressing mix & bacon drippings until
blended; stir into potatoes. Cook,
covered, on Low 7-8 hours or until
potatoes are tender. Top with green
onions. Serves 10

Cheesy Smoked Sausage
& Potato Casserole

3 C. Potatoes, peeled, boiled and cubed
(approx. 1 lb)
1 lb Skinless Smoked Sausage
4 tbsp Butter
4 tbsp Flour
2 cups Milk
1/2 tsp Salt
1/4 tsp Pepper
1/8 tsp Paprika
1/2 lb Velveeta cheese, diced
1/2 cup shredded Sharp Cheddar Cheese

Preheat oven to 350 degrees F.
Cut skinless smoked sausage in half, lengthwise,
and chop into 1/2″ pieces. Cook in  frying pan about
15 minutes, turning frequently to slightly brown.
Place potatoes in 2 quart casserole. Add cooked meat& gently toss. Mix all remaining ingredients (except shredded cheese & paprika) insaucepan over medium heat until warm, melted & smooth. (stir constantly.) Pour cheese sauce over potatoes and meat; sprinkle shredded sharp Cheddar cheese on top, and then paprika evenly over top. Bake 35-45 minutes until golden brown on top.

1 (20 oz) can cubed or crushed pineapple
1 (15 oz) can tropical fruit
1 box orange cake mix
1 1/2 sticks butter
1/2 C. instant oatmeal
1 C. coconut flakes

Preheat oven 350 degrees F.
Dump both fruits & juices into a 9 x 13
baking dish. Pour dry cake mix on top of fruit
& spread out evenly. Mix oatmeal & coconut &
sprinkle over cake mixture with fingers. Melt butter
& pour on top evenly. It should cover entire cake mix.
Bake 1 hour; serve with ice cream.
